Baked feta with thyme honey and cracked pepper

Six-month feta bakes without collapsing, which is the whole reason this works. A younger, wetter cheese turns to soup.

Ingredients

  • 400 g barrel-aged feta, in one piece
  • 3 tbsp thyme honey
  • 2 tbsp olive oil
  • 4 sprigs fresh thyme
  • Cracked black pepper
  • Bread, to serve

Method

    Heat the oven to 200 °C. Lift the feta from its brine and pat dry — surface water steams instead of browning.

    Set the block in a small dish, pour over the olive oil and tuck the thyme underneath.

  3. 03

    Bake 18–20 minutes, until the edges take colour but the block still holds its shape.

  4. 04

    Spoon over the honey, crack pepper generously, and serve straight from the dish with bread.
