How to store barrel feta so it doesn't go chalky

Brine is not packaging. It is the final stage of the make, and it keeps working in your fridge whether you look after it or not.

Keep it submerged

Exposed feta dries from the outside in and turns chalky within a day. The texture never comes back — rehydrating a dried edge gives you a soft, flat-tasting rind rather than the original paste.

Use a container just larger than the cheese so you need less brine to cover it, and press a small plate on top if the piece wants to float.

Top up with salted water, never plain

If you need more liquid, dissolve seven grams of salt in every hundred millilitres of water and let it cool before adding. Plain water pulls salt out of the cheese by osmosis, and the paste goes soft and sour inside two days.

Our barrels sit at 7.1% salt. Matching that at home is close enough; a point either way makes no practical difference.

Cold, covered, and away from strong smells

Four degrees is the target. Warmer and the cheese continues to ripen and softens; colder and the paste can crack.

Feta takes on aromas readily. Keep the container sealed and away from cut onion, cured meat and anything smoked.

How long you have

In good brine a 400 g cut holds condition for six to eight weeks, and it will still be safe well past that — it simply gets saltier and firmer as it goes.

If it does get too salty, soak the piece in milk for an hour before serving. Milk draws salt out without stripping the texture the way water does.
